Ingredients: 2 large bushels of Collard Greens 8 strips of smoked hickory bacon pieces or 2 smoked Turkey necks bones, 3 smoked Pork neck bones or 2 medium Ham-hocks (chop bacon in small strips cook down meat before putting greens in pot) ¼ c of bacon grease Sea salt and ground pepper *Goya Ham seasoning (2 pkg.) *Spice Supreme Greens seasoning

Directions:In large pot, add grease and bacon or either neck bones or ham hocks. Cook meat down to get the favor out of them. Roll leaves up and cut across the leaves into circles, and then cut length wide place in a sink of clean water. In sink with greens add a drop of dish washing liquid to clean greens and place the clean greens into another sink of clean water or a pot of clean water. Do this at least three times or until the water comes clean. You will have to drain the old water out and replace it with clean water. In collider shake excess water off and place greens into pot with season meat. Cook down a little and stir greens, then add enough water to cover greens in pot and stir. Cook greens on medium heat add seasoning once the greens started to come to a boil. Taste as you add seasoning, add more water to cover greens if not tender enough Cook until tender. Cooking time is about 2-3 hours on medium heat |

Notes: You can take this same recipe and make you some fried greens. In a black cast iron skillet add bacon grease enough to cover the inside of the pan as if you were going to sauté onions. Once grease is hot, add bacon pieces, neck bones cut and remove meat from neckbone or ham hocks fry to season the grease. Add clean cut greens, stir place a top on skillet and let it cooked down some. Keep stirring until it starts to fry, add more grease if needed and seasoning. You will know when its done cause the greens will smell like someone fried them. This recipe is so delicious its ridiculous. Who doesn't love fried greens. Happy Eats!!
