425 grams tin of Tuna - chunk style in brine
105 grams Red Salmon
6 large potatoes
2 medium onions
Tobasco sauce
Salt and white pepper
Bunch of parsley
Oregano
Flour
Lemon

Directions:
Directions:
Note: important to keep all moisture out
Drain tuna and salmon
Peel potatoes, cut into quarters and place in lightly salted cold water. Bring to the boil and cook until knife pierces easily. Drain well
Whilst potatoes are draining, dice onions and fry until golden
Mash potatoes, season with white pepper and 4 or 5 squirts of tobasco. Add salt but don’t over salt.
Add onions and mix well
Add tuna and salmon and combine
Add finely chopped parsley and a pinch of oregano
Form into patties and dust lightly with flour
In frying cook patties in combination of vegetable oil and butter
Fry until golden
Serve with a squirt of lemon
