Breadcrumbs
Mozzarella cheese
Olive oil

Directions:
Peel skin from Eggplant
Slice Eggplant into thin pieces
Mix in a bowl - two eggs,tad of milk ( mix the same way you would scramble eggs )
In another bowl pour bread crumbs
Preheat frying pan with olive oil ( use enough oil to be able to fry the thin slices of eggplant.
Place a piece of eggplant into egg batter then dip into bread crumbs to cover both sides of eggplant
Fry Eggplant until both sides are slightly brown. Place fried Eggplant on a paper towel covered flat dish to allow excess oil to drain

Layer into a baking dish -sauce, eggplant then cheese, repeat layer process to fill baking pan- place in oven 350º enough to melt cheese and allow sauce to release its flavor.( approximately 25 min cooking time)

Peeling skin from Eggplant is optional, sliced pieces can be round or oval( the thinner the better) tomato sauce preferred home made but can be substituted with your favorite store bought. The amount of eggplants needed will depend on how big of a cooking pan you have chosen.

Family favorite ! Loved by my Aunt Anita and Antoinette ! Only eggplant my wife eats!
