6 Tbsp lemon juice
3 large eggs
3/4 C sugar
2 Tbsp finely grated lemon zest
4 Tbsp unsalted butter-cut into small pieces (room temperature)

Directions:
Directions:
In a metal bowl, whisk lemon juice, sugar and eggs. Place bowl over simmering water and cook, stirring constantly 8-10 minutes until mixture is thick, (should have the consistency of sour cream). Pour hot mixture through mesh sieve into bowl. Stir in butter. Add zest. Cover and refrigerate until chilled.
