Grandma Bojan's dumplings Recipe

2 Cups flour

tsp baking powder
3 eggs
12 oz. small curd cottage cheese
stick butter or margarine, melted

1 stick butter
1 medium size onion, chopped (optional)
Additional salt and pepper to taste

Directions:
Directions:
Fill a large soup pot with water. Add 1 tsp salt. Bring to a boil while making dumpling recipe. In a separate frying pan, add 1 stick of butter and onions. Cook until onions are soft.

In a large bowl add flour, salt and baking powder. Mix with a whisk to combine.
Make a small well in the middle of the flour and add the 3 eggs and scramble with a fork. Mix with flour until well combined. Add cottage cheese with a wooden spoon and mix well. ADD MELTED BUTTER LAST. If dough is too sticky, add aprox. 1 TBS additional flour as needed to be able to handle mixture.

Drop by rounded tsp full into boiling water. Boil 7-10 minutes scraping bottom of pot to make sure dumplings are not sticking. Dumplings should float. (you can shape dumplings into crescents and add to boiling water. This is the way Grandma made them. It is very messy but the dumplings are more firm. I wear gloves when doing this) Remove with a slotted spoon into a colander. Let them drain until the next batch is ready. Place drained dumplings into butter and onion mixture and lightly brown.

These are a labor of love but well worth it. Our family has loved these dumplings for years and I have never seen another recipe like these. It reminds me of Easter at Grandma Bojan's and the simpler times when family came first.
