approximately 20 Scotch Bonnet Peppers finely chopped (yellow has best flavour)
approx 10 large juicy limes (juice only)
approx 2 tbsp salt
approx 2 tbsp white wine vinegar

combine all of the above in a bowl and mix well. Transfer to clean airtight storage jars and place jars in sunlight for a few days (a sunny windowsill works well)

Use sparingly to accompany curries. Remember, the older this sauce gets the hotter it becomes!

There are so many different variations to this sauce and no two people's will be the same...................we all think ours is best tho!!!

you can make this with green chillies or wiri wiri pepper too

I have added thin slices of red onion or gherkins before but sauce doesn't keep as long.

Store in fridge
