6-8 boneless chicken breasts
2 cans cream of chicken soup
1 16 oz. container of sour cream
1 stick of butter
2 sleeves Ritz (or whatever brand you prefer) crackers
2 tablespoons of poppy seeds (I use more)

Directions:
Directions:
Boil chicken in large pot with pieces of celery, onion, salt and pepper (or just boil it in chicken stock - its just to give chicken a little more flavor). When cooled, cut in bite size pieces or shred and place in 9x13 pan. Mix soup and sour cream together and pour over chicken (you can mix it in with chicken too if you prefer). Smash up the crackers and add poppy seeds. Melt 1 stick of butter in saucepan. Remove from heat and add cracker mixture and stir well. Place on top of soup/chicken mixture. Bake uncovered in 350 degree oven for 30-40 minutes.
