Delicious South Indian style vegetarian kurma recipe made with mixed veggies, Cashews, coconut, green chillies, spices and herbs.

Prep Time: 20 Minutes Cook Time: 40 Minutes

To Make about 2Quartz

Ingredient to Make Paste
• 5 tablespoon fresh coconut Optional
• 12 to 15 Cashews
• 1 Teaspoon Fennel Seeds (Saunf)
• Water for Grinding or add as Required

Vegetables For Kurma
• 1 to 1.25 cups medium sized cauliflower florets
• 1 cup diced potatoes
• ½ cup Green Peas
• ¼ cup Beans
• ½ cup Chopped Carrots

Other ingredients
• 2 Tablespoon Oil
• 1/3 cup finely chopped onion
• 1/3 cup Chopped tomatoes
• ¼ Tsp Turmeric Powder
• ½ Tsp Red chilli Powder
• ½ Tsp Garam Masala Powder
• ½ TSP Cumin Seeds
• 3 cloves
• 2 Green cardamoms
• 2 green chillies – chopped
• 3 to 4 medium sized garlic cloves, chopped ( Optional)
• ¾ inch ginger, chopped
• ~ 1.5 cups of Water
• Salt as required
• 2 to 3 Tbsp Chopped Coriander leaves (cilantro Leaves)

Preparation:
1. Soak 12 to 15 cashews in hot water for 20 to 30 minutes. Later drain and keep
aside.
2. Grind the cashews with Fennel seeds.
3. Chop all the vegetables and keep aside.

Making the Kurma
1. Heat 2 tbsp Oil. Add Cumin seeds, cloves and cardamom
2. Add the Chopped onions
3. Stir and sauté till the onion turn translucent or a light brown
4. Add Green chilies and chopped ginger and garlic and stir.
5. Add the chopped tomatoes, Turmeric powder, Red chili powder, Garam Masala
powder
6. Add the chopped Vegetables. Stir for 2 to 3 minutes
7. Add 1.5 cups water and salt.
8. Cook for 10 to 15 minutes until all the vegetables are cooked.
9. Then add the cahews/ Fennel seeds paste, simmer the stove for few minutes. It should not boil
10. If the gravy looks thick, then add some water.
11. Add the chopped Coriander leaves and stir.
12. Serve Vegetable Kurma with Poori, Roti or Naan bread or white rice.
