1/4 cup - moong dal, cooked
1/2 cup - diced chayote squash (alternately can use diced green beans or white pumpkin)
1-2 tsp - sambar powder (or to taste)
1/8 tsp - aesofoetida powder
few curry leaves
salt, to taste

To season:
1/2 tsp - mustard seeds
1 tsp - urad dal
1 - red chili, broken into two pieces
1 tsp - oil
1 tsp - ghee
1/2 tsp - coconut oil

To coarsely powder:
1 tsp - black pepper
11/2 tsp - cumin seeds

Directions:
Directions:
*Cook the desired vegetable in water along with the sambar powder, aesofoetida, a few curry leaves, and salt.
*Once the vegetable is cooked, add the cooked dal. Adjust salt and let cook.
*While the vegetable/dal mixture is cooking, heat the oils and ghee in a separate small pan. Add the mustard seeds and let pop.
*Add the urad dal and sauté till it turns golden brown. Add the red chili, and the coarsely powdered pepper/cumin mix.
*Add the seasonings to the vegetable/dal mix. Let cook for 2-3 minutes more.
