6-8 Large Tomatoes
1 Medium Onion
1 Carrot
1 Celery stick
2 Tbs Olive oil
1 tin of tomato puree
Pinch of sugar
2 Pints of Chicken stock

Directions:
Directions:
Large saucepan add the olive oil, onion, carrot, celery and mix together on low for about ten mins

Cut the tomatoes into quarters and take out any of the hard core

Add to the saucepan and leave for 15 mins
Add the pure and sugar
Add Chicken stock

Leave for 30 mins on a low heat

Puree for a smooth soup
