Onion - 1/2
Green pepper -1/2
Red pepper1/4
Carrot - 1/2
Peas - handful
Corn- handful
Cauliflower - 1/4
Salt - to taste
Turmeric - ½ tsp
Mustard seeds-¼ tsp
Oil or ghee- 1 tbsp
Curry leaves - few
Urad dal - ¼ tsp
Green chilies- to taste
Coriander leaves to garnish
Asafoetida - to taste
Ginger - grated to taste

Soak 1 cup Red Poha in water for about 30 min and drain the water completely.You may be able to get away soaking for 15 min if the poha is of the soft variety.
Dice onion, all the vegetables into really small pieces and heat the oil or ghee on the stove. Add mustard seeds, asafoetida, urad dal. After the mustard seeds have burst and the urad dal has become brown, add the cut chilies, ginger and vegetables. Add salt, turmeric and cook till vegetables have become tender. Add the drained Poha and cook for 5-10 min on medium heat. Garnish with coriander leaves. Serve and enjoy.
