2 lbs. rigotta
2 lbs. flour
4 eggs
2 tbsp olive oil
1 tsp garlic powder
1 cup Parmesan cheese

Directions:
Directions:
Cream rigotta cheese with olive oil with hand or stand mixer. Add eggs one at a time until fully mixed. Add garlic powder and grated Parmesan cheese and blend. Add flour one cup at a time until fully incorporated. Knead dough for 15 minutes. Roll dough into 1" ropes and cut off ½" pieces and freeze immediately.

Cooking

Bring a sauce pan full of salted boiling water to a full boil and add frozen pasta to water. When pasta floats it's ready.
