Ingredients: Pasta
1 lbs. flour + 2 cups for kneading 4 eggs 1½ tsp salt 6 Tbsp. olive oil 1 cup water
Ricotta Cheese Filling
2 lbs. ricotta cheese 3 eggs ¼ lbs. grated Parmesan cheese ½ tsp salt ½ tsp garlic powder ½ tsp parsley ½ tsp cut up garlic

Beat eggs until well blended. Beat in oil. Sift flour and salt into a pile and form a well. Place the wet ingredients into the well and slowly incorporate the flour. Once the wet ingredients have been used continue to add water as need until the dough slightly sticky. Knead the dough for about ½ hour, add flour as needed to keep it from sticking to the surface. Roll dough into ¼" sheet and cut into 2-3" round patterns.
Ricotta Cheese Filling:
Place the ricotta cheese in a cheese cloth bag and place it in a strainer to allow excess liquid to drain. Once drained, cream the ricotta cheese with a hand or stand mixer. Add the eggs in one at a time until fully incorporated. Add Parmesan cheese, salt and pepper, garlic powder, parsley and garlic.
Assembly
Add 1 tsp of ricotta mix on each pasta round. Fold over and crimp edges.
Cooking
Bring a large sauce pot of salted water to boil. Gently place ravioli in the boiling water. when they are float. |
