200 grams (7 oz.) butter
250 grams (8.8 oz.) sugar
1000 grams (2.2 lbs.) quark or Greek yogurt
135 grams (475 oz.) non-rising flour
1 teaspoon vanilla
6 eggs
1 teaspoon baking powder
Juice of one lemon

Directions:
Separate whites and yolks of eggs. Beat whites stiff with a mixer and set aside.
Put egg yolks in big mixing bowl, add butter, sugar blending with a mixer.
Continue adding quark, flour, baking powder, vanilla and juice of one lemon.
Carefully fold in egg whites.
Add small can of mandarin oranges (without juice) or other berries if desired.
Line a 26 cm (10 inch) spring form cake pan with baking paper, then carefully fill with cake batter.
Bake 75 minutes at 190°C (375°F) for conventional oven or 160°C (320°F) for circulating heat oven.
Let cool completely before removing from form and serving.
