1 qt. whole milk
1 1/2 T. lime juice(softer cheese) or vinegar(firmer cheese) OR
1/2 c. yogurt(for less tart and creamier consistency) or cream(softest)

Directions:
Directions:
Bring milk to a rolling boil.
Add lime juice, vinegar, yogurt or cream.
Keep boiling for another 6-8 minutes.
When milk starts to separate, simmer for another couple of minutes until curds and whey are formed.
Line a container with cheese cloth and strain whey.
Fold ends of cheesecloth in and weight the top to further drain and shape the paneer.
When done, cut into cubes.
