1/2 c. all-purpose flour
1/8 tsp. salt
1/8 tsp. sugar
1 T. melted butter or oil

1. In a bowl mix, all ingredients using a blender until batter is smooth and lump-free.

2. Brush 8” pan with a very thin layer of oil, and heat on medium until quite hot.

3. Ladle enough batter to cover the bottom of the pan using swirling motion to make sure batter spreads evenly. Use a small amount of batter when you start and add drops to fill in. You want the blini to be thin and delicate.

4. Once the pan is fully covered, cook for about 1.5 minutes until edges are lightly golden, flip over using spatula cook another 1.5 minutes.

5. Slide blin onto a plate and repeat the above steps.

Traditional Russian “blini” are not exactly pancakes but more crepe like spread thin and folded with savory or sweet fillings. The blin symbolizes the son- golden, round and warm and among the most popular and most-eaten dish in Russia.
