10+ Fresh Mint Leaves

1 Full Jigger Fresh Lime Juice

1 Jigger Simple Syrup

1 Cup Ice Cubes

2 Jiggers White Rum

Directions:
Directions:
Muddle mint with some of the simple syrup. Add rum, lime juice, remaining simple syrup, ice and shake well. Top off with Seltzer, lime slices and mint leaves.


DIY Simple Syrup
2 Cups Sugar
2 Cups Water

Combine in a Teflon Saucepan. Bring to a boil and return to a constant simmer, stirring until sugar has dissolved. Once mixture is totally clear add a bunch of fresh mint, cover and remove from heat.

Once cooled, remove mint leaves by pouring through strainer and place in refrigerator. Simple syrup will last for 3-4 weeks in an airtight container.
