Basmati rice 1 cup
Peas, cauliflower florets, carrots and beans julienned 1 1/2 cups
Green chilies 2 cut lengthwise
Onion 1 medium chopped
Tomato paste 1 tbsp
Ginger garlic paste 1/2 tsp
Garam masala powder 1/2 tsp
Cardomom 2
Cinnamon 1/2 stick
Cloves 2
Jeera 1 tsp
Ghee 4 tbsps
Water 2 cups
Coconut milk 1/2cup
Salt to taste
Handful of cashewnuts fried in ghee.

Wash and soak rice for 10 minutes.
Heat the ghee in a 4 qt pan.
When hot add the jeera, cardomom, cinnamon, cloves and the bay leaf.
When the jeera pops add the chopped onions.
Sauté till translucent.
Add the mixed chopped vegetables, green chilies, tomato paste and sauté for 5 minutes.
Add the garam masala powder.
Now add the drained rice and sauté for 2 minutes.
Add the salt.
Add the water and bring to a boil.
Turn the heat down to a medium.
Add the coconut milk and mix.
Close tightly and cook for about 10 minutes till rice is cooked.
Garnish with cashew nuts.
Serve with a simple raita.
This can also be made in an Instantpot.
