Potato - 4 medium (peeled and cut in cubes)
Carrot - ½ cup (cut into small cubes)
Beans - ½ cup (you can use frozen cut)
Peas - ¼ cup
bell pepper – ½ cup chopped
cauliflower florets – ½ cup .
butter - 2 tbsp
Onion 2 medium (finely chopped)
Red chilli powder – ¼ tsp
Turmeric powder – ¼ tsp
Pav Bhaji Masala powder – 1 tsp
Tomato paste - 1 tsp
Salt to taste - ½ - ¾ tsp
6-8 Pav (buns from Indian store or hamburger bun)
Coriander to garnish

Directions:
Pressure cook, potatoes, peas, beans, carrot, bell pepper and cauliflower with ¼ tsp of salt and some water, let it whistle twice. If cooking outside cook until it is soft and tender. Drain the water, mash the cooked vegetable and keep it aside.
In a pan add 1 tbsp of butter and finely chopped onion and fry until it turns translucent. Then add tomato paste, chilli powder, turmeric, (remaining) salt and pav bhaji masala, fry for a minute. Now add the mashed vegetables, mix everything and cook for another 3 to 4 minutes. Add water if needed to make sure the vegetable mix reaches a desired (spreadable on a bun) consistency.
Slit open pav buns (or hamburger bun). Spread little butter on top, warm the buns in the oven (in a tray).
Spread the vegetable (Bhaji) on the bun garnish with coriander and serve hot or warm.
For garnish you can also use finely chopped onion and lemon juice.
