2 medium leeks, sliced
1 onion, chopped
480g sweetcorn fresh, frozen or canned
4 spring onions, finely sliced
960ml vegetable stock

Directions:
Directions:
1. Fry off the onion and leek until softened

2. Stir in the sweetcorn and add the stock

3. Bring to the boil then simmer for approx 15 mins

4. Put 3/4 of the soup into a food processor and blitz until smooth

5. Add back to the remaining soup and simmer until soup is thickened

6. serve between four
