1/4 C ground sausage
2 or 3 large Yukon gold potatoes
4 cloves garlic
1/2 yellow onion
Salt
Pepper

Optional:
Fruit, toast, beverage, eggs

Directions:
Directions:
1. Warm large saucepan to MEDIUM HEAT with 1 tsp oil/butter
2. Finely chop onion, add to pan stirring occasionally
3. Dice potatoes to 1/4" , add to pan tossing occasionally
4. Add sausage, breaking into small pieces. Toss and/or mix
5. Mince garlic, add to pan.
6. Allow to cook thoroughly, allow onions caramelize if desired.
7. Cook eggs after moving hash aside in pan to make room.
8. Plate with optional fruit, toast, eggs. Season to taste.
