6 sweet red peppers
6 tomatoes
1 brown onion
3 garlic cloves
2 tsp of olive oil
Fresh basil
1 tsp mixed herbs
1 1/2 cups of veggie broth

Directions:
Directions:
1 Chop up the red peppers, onion & tomato’s add to a roasting tray with whole garlic some fresh basil and cover with the olive oil and pinch of salt and pepper, roast in the oven for 45 minutes.

2 transfer the ingredients to a large saucepan add all the other ingredients and blend with a hand held blender serve we some fresh basil and enjoy.

This is one of my families favourite recipes, its really sweet so perfect for any fussy child, try boiling off some red lentils and adding them to for some added protein.
