Ingredients: 2 tablespoons olive oil 1 # hashbrowns (fresh or frozen ) 1 cup red onion 1/8 “diced 1 tablespoon minced garlic 1 cup red bell pepper 10 oz. of either ham,bacon or sausage One and a half teaspoons of kosher salt 1/4 teaspoon black pepper 1/4 cup sliced green onions 2 cups grated cheese 1/4 cup cornstarch 2 1/2 cups half-and-half 8 large eggs

Directions:Pre-cooked thoroughly breakfast meat. Set aside Set oven rack to center position Preheat oven to 350°F Grease a 9 x 13“ baking dish with olive oil on bottom and sides Heat a large sauté pan or cast-iron pan over medium high heat. Add 2 tablespoons olive oil add red onions and garlic sauté for 1 minute. Add bell peppers sauté for 2 minutes. Set aside all sautéed vegetables Brown Hash Browns Stir in 1/2 teaspoon salt , black pepper & green onion mix above items together. Transfer potato mixture to baking pan. Spread into even layer. Sprinkle half of cheese evenly on top of potatoes mixture. Whisk together the corn starch and 1 teaspoon salt together in large bowl. Add half-and-half and eggs with until thoroughly combined. Pour egg mixture over potatoes mixture. Sprinkle remaining cheese on top Bake for 20 minutes. Rotate the pan and bake until center is set, and a toothpick inserted comes out clean, about 30 minutes. Internal temperature should be around 180° to 190° Cool casserole for 10 minutes before slicing and service. |
