1 cup Crisco shortening, melted and cooled
1 cup brown sugar, packed
½ cup granulated sugar
2 eggs
1 tsp. vanilla
3 cups Robin Hood oats
1½ cups Robin Hood Nutri flour blend
1 tsp. baking soda
½ tsp. cinnamon
½ tsp. salt
1 pkg. Chipits special dark chocolate chips
½ cup Chipits Skor toffee bits
5-6 cups ice cream

Preheat oven to 350ºF. Line baking sheets with parchment paper. Beat shortening and sugars until combined. Add eggs and vanilla. Add next 5 ingredients, mixing until incorporated. Beat in remaining 3 ingredients. Drop by heaping tablespoon onto prepared baking sheets about 2" apart. Bake for 15-17 minutes until cookies are golden. Let cool on baking sheets 3-5 minutes. Transfer to wire rack until cooled. Take 2 cookies and place approximately ¼ cup of your favorite ice cream between the cookies and press gently.
