1 chopped onion
1 chopped bell pepper
2 cloves garlic
1 tsp chili powder
1/2 cup oleo
2 cup rice
1 qt canned tomatoes
2 cups water
4 beef bouillon cubes

Directions:
Directions:
Melt butter in deep skillet. Brown onion, garlic and rice until tender. Add bell pepper. In a small saucepan, boil bouillon cubes in water. Add to rice mixture along with tomatoes and bring to boil. Cover and let simmer for 30 or 40 minutes.

Many a day Mom fixed the Spanish Rice on weekends to feed everyone that happened to drop by to putter on their cars in the garage or just to visit. At times it looked like a used car lot (all Fords of course!)
