8 slices bread, cubed
3/4 lb. grated cheese
2 lb. link or patty sausage (cooked)
4 eggs
2 1/4 cup milk
dash of salt
3/4 tsp dry mustard
1 can cream of mushroom or chicken soup
red or green peppers for garnish

Directions:

Cut sausages into bite size pieces and brown in frying pan. in 9 x 13" casserole dish make a layer of bread cubes, cheese and meat. Repeat layers.

Beat eggs, then mix with milk, salt, mustard and cream soup, which has been diluted with 1/3 can water. Pour over bread-cheese-meat mixture. Cover and put in refrigerator overnight. Bake the next morning at 325 for 1 hour, adding peppers for garnish just before putting in oven.

We usually have this on Christmas morning after opening gifts. Lately I have been buying the frozen pre-cooked sausage, so then I just thaw them a bit and don't need to brown them before putting in casserole. Sometimes I have probably used a couple "squirts" of prepared mustard if I can't find my dried mustard!
