2 Tbsp water
1 1/2 Tbsp olive oil
1 Tbsp balsamic vinegar
1/2 tsp salt
1/4 tsp black pepper
15 oz can cannellini beans, rinsed and drained
1/2 cup grape tomatoes
1/4 to 1/2 red bell pepper, sliced thinly
several cups of baby arugula
1 oz grated Parmesan cheese (optional)

Directions:
Directions:
WHISK together water, oil, vinegar, salt, and pepper in a large bowl. Add drained beans, tomatoes, and peppers and toss to combine. Add arululat and toss to coat. Top with Parmesan if desired. Yields 2 cups per serving. 4 servings.
