1 ½ lbs boneless skinless breasts, pounded to ½ inch thickness
1 C shredded Mexican Cheese, more or less depending on taste
6-8 taco flour tortillas OR 10-12 corn tortillas

Marinade
3 tbls olive oil
¼ c honey
1 tbls Dijon mustard
1 tbls ketchup
1 tbls apple cider vinegar
1 tbls lime juice
1 tbls McCormick Grill Mates Bacon Chipotle Seasoning
1 tsp ground coriander
½ tsp EACH dried oregano & salt

Cilantro Lime Crema
1 c sour cream
2 tbls miracle whip
¼ c loosely packed cilantro leaves, minced
1 tbls lime juice, or more to taste
¼ EACH ground cumin, garlic powder, salt

BLT Slaw
6 slices cooked bacon, crumbled
2 c thinly sliced cabbage
1 large Roma tomato
2 tbls red onion
1 tbls lime juice
1 tbls Cilantro Lime Crema - in directions
1 tsp Reserved marinade - in directions

Marinade
1. Whisk together all the marinade ingredients in shallow dish or large freezer bag and remove 3 tbls (for basting and Slaw). Add chicken to marinade and let sit for 2-6 hours.

Cilantro Lime Crema
1. Meanwhile, whisk together all of the Cilantro Lime Crema ingredients. Add 1 tbls Cilantro Lime Crema to a large bowl for BLT Slaw. Refrigerate remaining Crema.

BLT Slaw
1. Add all remaining BLT ingredients to tbls Crema EXCEPT bacon. Add 1 tsp reserved marinade. Toss until evenly coated. Refrigerate. Toss with bacon just before serving so it stays crispy.

2. When ready to cook, let chicken sit at room temperature for 15-30 minutes (time permitting).

GRILLING DIRECTIONS

1. Preheat and oil grill to medium heat.

2. Grill chicken, undisturbed, for 5-7 minutes each side, basting with reserved marinade half way through.

3. Remove chicken from grill and let rest 5 minutes and toss with any remaining marinade.

CAN ALSO BE MADE ON STOVETOP.

Assemble

Melt desired amount of cheese on tortilla, top with chicken, BLT Slaw, and Cilantro Lime Crema. Add more hot sauce if desired.
