** cooked meat of your choice -- great with leftover chicken, steak, etc.
small onion diced
2 cans 8 ounces each tomato sauce
1 can beans drained and rinsed
1 can whole kernel corn undrained
1 can diced green chiles, undrained
1 small can sliced black olives
2 tsp chili powder
1 tsp cumin
1 tsp garlic
1/2 tsp oregano
1/2 tsp crushed red pepper (optional)
6 8-inch flour tortillas cut into strips
shredded cheese

Directions:
Directions:
1. Cook onion in oil until tender. Stir in tomato sauce, spices, beans, corn, and chiles. Simmer for 5 minutes. Stir in black olives.

2. Spray 9x13 pan with nonstick cooking spray. Put some of mixture in the bottom of the dish. Add a layer of tortillas. Top with half of the meat mixture and half the cheese. Repeat layers ending with meat and cheese.

3. Bake at 350 degrees until hot and bubbly. Garnish with sour cream, cilantro, crushed tortilla chips or your favorite Mexican toppings.
