4- 8 oz. cream cheese- room temp
1 c. sugar
1 tbsp. lemon or lime zest
2 tbsp. lemon or lime juice
1 tbsp. vanilla
4 lg. eggs

crust-
2 tbsp. melted butter
1/2 c. gram cracker crumbs

sauce-
1- 12 oz. apricot preserves
2 tbsp. water
3 tbsp. apricot or plum brandy
1 c. blueberries

Directions:
Directions:
Mix cream cheese, sugar, zest, juice and vanilla till blended
Add eggs 1 at a time, mixing each for 30 sec.
Pour into cheesecake pan
Place it in a roasting pan with water 2/3 up the outside of the cheesecake pan

Bake for 1 hour at 350º
Cool a few hours before un-molding

Sauce:
Add the preserves, water,& brandy into a pot
Cook just barely past bubbling to cook out the alcohol

Pour over cheesecake and add the blueberries to the top
