1 lb lard
1 1/2 c. sugar
2 eggs
3 1/2 tsp. baking powder
2 tsp. anise extract
1 tsp. vanilla extract
4 c. flour

About 1 tbsp. cinnamon
About 1 c. sugar

Directions:
Directions:
*Mix together lard, sugar, and eggs.
*Add baking powder, anise and vanilla extracts. Blend well.
*Mix in 1 cup at a time of the flour. It will be slightly sticky.
*Refrigerate for 1-2 hrs.
*Roll dough out on a floured surface, 1/2 in. thick.
*Flour the cookie cutter every time to keep it from sticking.
*Bake in a Pre-heated oven at 350
*Bake for 9-11 min. They should be slightly golden.
*Let cool then dip the cookie into the cinnamon/sugar mix.

This is the State cookie for New Mexico. They're light and crispy. I love how they melt in your mouth!
