1 cup cooked barley
1 cup of your favorite salsa
1/2 cup tomato juice
2 Tblsp. white vinegar
2 Tblsp. fresh lime juice
black pepper to taste
2 green onions sliced
1 can red kidney beans drained
1/2 cup cilantro chopped
3/4 cup frozen corn
1 red or green pepper chopped
Corn chips
Grated Cheddar Cheese

Mix everything and add the cheese on top. Serve with corn chips.
