Ingredients: 2 large egg whites at room temperature 1/8 tsp. cream of tartar 1/2 tsp. vanilla extract 1/8 tsp. salt 3/4 cup sugar 1 cup white chocolate chips 1/3 cup + 2 tbsp. chopped peppermint candies

Directions: |
Directions:Preheat oven to 250. Beat egg whites and cream of tartar until soft peaks form. Add vanilla and salt. With mixer on high, slowly add sugar 1 tbsp. at a time until straight peaks form. Turn off mixer and fold in chocolate chips and 1/3 cup peppermint.
Line baking sheets with parchment paper. Drop meringue in rounded 1 tbsp. spoonfuls slightly apart and sprinkle with peppermint candy.
Bake 30-35 minutes until meringues feel dry and set, but are still pale. Be sure to rotate pans half way through. Turn off the oven and open the door and allow cookies to sit another 10 minutes until pans cool. Store in airtight container |
