3 eggs
1 cup of salad oil
2 cups of sugar
2 teaspoons of vanilla
2 cups of shredded zucchini
3 cups of flour
1 can of crushed drained pineapple
1 cup of mashed banana
1/2 teaspoon of baking powder
2 teaspoons of baking soda
1 teaspoon of salt
1 1/2 teaspoon of cinnamon
1 1/2 teaspoon of grounded nutmeg
1 cup of chopped walnuts

Directions:
1. Beat eggs to blend. Add oil, sugar, and vanilla. Beat till thick and foamy. Stir in zucchini and pineapple.
2. Combine flour, baking soda and powder, salt, cinnamon, nutmeg, and nuts.
3. Stir gently into zucchini mixture til blended. Divide into 2 greased floured loaf pans.
4. Bake at 350 º for 1 hour or till tooth-pick comes out clean.
