1 1/2 pound mild choc
1/3 cups of heavy cream
1/3 cup of half and half
1 1/2 teaspoon of vanilla
chocolate coating or white summer coating or toasted coconut
or cinnamon flavor cocoa (1/4 cup of cocoa + 1 tablespoon of cinnamon)

Directions:
Directions:
1. Melt chocolate in double boiler over hot water.
2. Beat till smooth combine heavy cream and half and half in a small saucepan, + heat to scalding.
3. Remove from heat and let stand. Add warm cream to melted choc all at once. Beat till smooth and well blended.
4. Add vanilla and let cool when cool beat with mixer till light and fluffy.
5. Let stand in fridge till firm. When firm roll 1 teaspoon of canduy into ball. Roll each ball immediately in choc coating.
6. Make vanilla truffles by sub. 1 1/2 lb milk choc with 1 1/2 lb white summer coating.
