Pulled Pork:
2 tbs. olive oil
1 red onion, sliced
2 bell peppers, sliced
1 Tbsp. chipotle in adobo puree
2 Tbsp. tomato paste
2 Tbsp. brown sugar
1 Tbsp. white vinegar
28 oz. diced fire-roasted tomatoes
14 oz. hominy
4 c. pulled pork

Flourless Cornbread:
2 c. yellow cornmeal
4 tsp. baking powder
1 tsp. salt
3 large eggs
1/4 c. sour cream
1 c. cream style corn
1/2 c. canola oil

Directions:
Directions:
Preheat oven to 400ºF
Place a 12-inch cast iron skillet over medium heat. Add the oil, onion, peppers and season with salt and pepper. Cook until soft and translucent, about 10 minutes. Add the chipotle in adobo puree, tomato paste, brown sugar, vinegar, tomatoes, hominy and pulled pork. Bring to a simmer and cook until thickened, about 5 minutes. Remove from heat. Pour cornbread batter on top of the pork mixture. Spread evenly. Place skillet in the oven and bake until golden brown on top, about 20-30 minutes.
