5 cups flour
1 cup sugar
4 teaspoons baking powder
2 teaspoons baking soda
pinch of salt
1/2 pound butter or margarine
2 tablespoons Crisco
4 egg yolks -beaten
1/2 pint sour cream
squeeze of fresh lemon

Filling:
3-20 ounce cans of crushed pineapple
3 teaspoons minute tapioca
1 2/3 cups sugar

Dough:
In a large bowl work the flour, butter (or margarine) and Crisco as you would for pie dough. Add sugar, salt, baking powder, baking soda and mix well. Add vanilla, lemon juice, egg yolks, and sour cream. Dough should be pliable to roll out on a flowered surface. Divide dough into 2 balls. Line a 12X17 inch cookie sheet bringing dough up the sides of the cookie sheet.
Filling: Place filling ingredients in sauce pan and cook to boiling point. Reduce heat and let simmer for 5 minutes, mixing often. Remove from heat and cool completely before filling dough lined cookie sheet.
Assembly: Pour cooled pineapple filling onto dough lined cookie sheet. Roll out remaining dough and cut into long strips. Criss- cross strips on top of filling .
Bake in preheated 350 degree oven for 40 minutes or till dough is lightly brown. Cool before cutting.
