1 cup all purpose flour
1 cup granulated sugar
1/4 teaspoon salt
1 teaspoon nutmeg, plus some to sprinkle on top
1 teaspoon vanilla
2 cups water
uncooked 6 in pie crust
3 teaspoons butter slices

Directions:
Directions:
Mix flour, sugar, salt and nutmeg, add water then vanilla. My grandmother always mixed her ingredients by hand right in the crust. Today I mix mine in a bowl with a wire whisp.

Pour mixture into the raw crust. Slice the 3 teaspoons of butter into 6, 1/2 teaspoon size slices and lay on top of the filling. Sprinkle top of pie with a little nutmeg and bake. Bake at 375º for 30-35 min.

It's important for the texture of the pie not to over bake it. Around the edge will be set but the top center of the pie should still be slightly runny with butter and pie filling. This will firm up as it cools but we love to eat it hot while it's still runny in the center. Over baking will make it thick and pasty.

Our Mamaw Corrie would make Pour Man's Pie when we were feeling bad but especially for holidays. It was a family favorite. It's one of those things that you either love or hate. Even my husband who doesn't like doughy things loves it.
Mamaw told me it was a pie they made during the depression so they could have dessert. Mamaw & Granddads families all came from Illinois and I don't know if this is a recipe that her mother past on to her or got from someone after moving to Texas.
