1 medium flank steak, less than 1 lb. in weight, butterflied
Garlic powder
Parsley
Grated Italian cheese, preferably Locatelli
Finely minced provolone cheese
Prosciutto slices
1 hard boiled egg, sliced
Margarine slices
Raisins & pignoli nuts, if desired

Directions:
Directions:
On butterflied flank steak, lay out all ingredients except prosciutto slices, within 1 inch of the edge of the steak. Take the prosciutto slices and cover all the ingredients with a thin layer of the prosciutto.

Roll tightly, tucking in the edge as you are doing so, and tie tightly with white cord.

Brown on all sides in approximately 2 tablespoons oil, and then cook in meat sauce for at least 1½ hours.

To serve, remove cord and cut in slices on platter.
