18 (Jumbo Pasta) shells, cooked and drained
1 box frozen chopped spinach, thawed and drained
2 c. cooked chicken, shredded (I use rotisserie chicken from grocery store)
16 oz. cottage cheese
1 large egg
1 c. Parmesan cheese (I buy block of cheese and grate)
1 jar alfredo sauce
4 Tbsp. extra virgin olive oil
1/2 tsp. garlic salt
1 tsp. salt
1/2 tsp. black pepper
1 Tbsp. fresh rosemary, chopped
Sprinkle of thyme

Put enough of the sauce to lightly coat the bottom of a large baking dish or lasagna pan. Combine chicken, spinach, 1/2 c. Parmesan cheese, cottage cheese, egg, and all spices in a bowl. Fill each shell with this mixture. Put the rest of the alfredo sauce over shells. Sprinkle with the remaining 1/2 Parmesan cheese. Cover loosely with foil and bake at 350º for 30 minutes. Uncover and bake for an additional 15 minutes. I also saute mushrooms and include that in the mixture for a variation.
