Ingredients: HERE IS A QUICK AND EASY GREEN SALAD TO SERVE ON THE SIDE OF CHICKEN OR FISH DISHES.
It does not have a classic vinegrette dressing but is prepared in the salad bowl.

You will need:
1 head of iceberg lettuce, cleaned and dried, cut or ripped into bite-size pieces 1/4 red onion (an onion about the size of a baseball) Extra Virgin Olive Oil Red Wine vinegar Italian seasoning Kosher salt & freshly ground black pepper 1 large tomato, washed and diced (large dice)

Directions:Put lettuce, cut or ripped into bite-size pieces, into large salad bowl along with the red onion that has been cut into very thin slivers. Add 2 Tbsp. of olive oil and toss well so all of the lettuce is covered. Cut tomato on a bread board, salt it and set aside. Add 1 Tbsp. of Italian seasoning to bowl (before adding, put the Italian seasoning in the palm of your hand and rub it with your fingers; it will open up and be more flavourful). Toss seasoning through the salad. Add 1 more Tbsp. of olive oil -- toss well. Lettuce should be shiny with olive oil. Sprinkle salad with salt, pepper and add 1 Tbsp. of red wine vinegar (or to your taste, if you like a more vinegary taste, add more vinegar here). Add tomatoes. Toss well. Serve. |

Notes: This salad is loosely based on a salad Needie used to make a lot. She always used Iceberg lettuce. Feel free to use Romaine, if you want to.
This salad tastes best (to me) if it is salty tasting and oily....but, that's me!
