1 C. cooking oil
2 C. sugar
4 eggs
2 C. Flour
2 tsp baking soda
2 tsp. cinnamon
1 tsp. salt
3 C. shredded carrots
1/2 C walnuts

Directions:
Directions:
Beat ingredients together oil, sugar, eggs. Sift flour with dry ingredients, stir into sugar mixture. Fold in carrots and nuts.
Pour into two greased and floured, or sprayed, 9 inch round pans
Bake at 300º for 30 to 40 min. Remove and cool.
Frost with cream cheese icing.
