2 1/2 cups all purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup butter, softened
1 cup granulated sugar
2 eggs
1 1/2 teaspoon vanilla
3.5 ounces can shredded coconut

Directions:
Directions:
Preheat oven to 375 degrees Fahrenheit. In a small bowl, stir together flour, baking powder, and salt. In a large bowl, cream butter and sugar with a mixer until fluffy. Beat eggs into butter mixture a little at a time and mix well. Add flour mixture to butter mixture a little at a time and mix well. Wrap dough in plastic and refrigerate for at least 30 minutes. Roll dough to 1/8 inches thickness and cut out cookies with snowmen shaped cookie cutter. Place cookies on ungreased cookie sheets. Bake 7 to 10 minutes or until lightly browned; let cool for 5 min. and decorate with icing and coconut.
