1/2 gallon water
1/2 cup salt
1/2 cup sugar.
1 T Garlic powder
1T ginger

dissolve salt and sugar in water with garlic and ginger powder
Split fish, remove spine and inner bone cage.

soak overnight in brine
rinse well
smoke at low temp 100 to 150 for 4 -5 hours. Remove. Let set for 30 minutes. Place in refrigerator overnight to firm up or place in vacuum bag and freeze.
