1 can blackeyed peas ( I use Trappeys with Jalepenos), drained & rinsed
1 can black beans (I use Bush's), drained & rinsed
1 can corn, drained & rinsed
1 can Rotel, drained
2/3 cup cilantro, chopped
1 small red onion, diced
1 small bell pepper, diced
1 fresh Jalepeno, diced
3 cloves garlic, minced
1/2 c. Balsamic Vinegarette dressing
Juice of 1 lime
Salt & pepper to taste

Mix all ingredients together in a large bowl. Cover & refrigerate 2 hours before serving. We like it with Fritos Scoops.

Had to write this down before I forgot how to make this! Obviously this recipe is a clean out the fridge recipe, but it was great!
