1 cup yellow squash, thinly sliced
1 cup zucchini, thinly sliced
½ cup carrots, grated
¾ cup onion, chopped
1 can cream of chicken or mushroom soup
½ cup sour cream (regular or low-fat)
1 package herb or corn bread stuffing cubes (salad croutons also work)
To taste salt and pepper
¼ cup butter, melted

Pre heat oven to 350º
Grease a 13" x 9" baking dish.
Mix all ingredients, except butter, together and put into prepared baking dish.
Pour butter on top and bake 40-45 minutes.
