You never had Mac and Cheese until you've made your own! It was a staple in our household for many years.

3 cups (750 mls) Elbow Macaroni or whatever shape you have or desire.
1/4 cup Butter
1/2 cup Flour
2 cups Milk ( Whole Milk is recommended for creamier texture )
Salt, Pepper and Cayenne pepper to taste
3 cups Grated Medium or Old/Sharp Cheddar Cheese
Options: The variety of cheeses available is amazing. New Bothwell makes a good melting cheddar, but their Swiss is also great. Try different combinations!
1 cup Bread Crumbs
3 Tbsp melted Butter

Directions:

Preheat Oven to 350 degrees.

In a large pot of boiling salted water, cook macaroni of choice till done…follow package directions.
While Macaroni is cooking, make a basic White Sauce:

Melt 1/4 cup Butter in a small pot. Add Flour, stirring thoroughly into melted butter. Cook gently for a few minutes, till butter starts to brown. Add Salt, Pepper and few grains of Cayenne pepper.
Slowly stir in Milk, stirring continuously to prevent lumps, on medium high heat. Once bubbling, reduce heat slightly and Keep stirring to prevent lumps.
Remove from Heat and add Cheddar Cheese, stirring till cheese melts.

Add Cheese Sauce to cooked, drained macaroni in a casserole dish.
Top with Buttered Bread Crumbs.
Option: Sprinkle with Grated Parmesan cheese as well.

Bake at 350 degrees 30-40 minutes uncovered. Let sit 10 minutes before serving.

This is a great basic Mac and Cheese. When the kids were young and very busy with after school sports, a large roaster of Mac and Cheese provided a few quick suppers! Frozen mixed vegetables and a healthy dollop of Ketchup made the meal complete. We rarely ate out or ordered in. despite our busy work schedules. It was Casseroles like this that made for healthier fast suppers.
