½ pound gemelli pasta
½ batch of Sautéed Broccoli Rabe with Garlic (1 bunch instead of 2)
½ cup good quality ricotta cheese blended with ¼ cup seasoned pasta water
Toasted sliced almonds to taste (toasted in a pan for a few minutes until just starting to spot)

Directions:
Directions:
Toast the almonds first in a wide skillet and then remove to a bowl. Then make the broccoli rabe in the skillet as recipe states.
Cook the gemelli in salted water until al dente and reserve ¼ cup of the pasta water. Toss the pasta in the skillet with the rabe and toss to coat well. Add the ricotta and the ¼ cup of pasta into the now empty pasta cooking pot and stir well with a wooden spoon (off heat). Add the pasta with the rabe to the pasta cooking pot with the cheese and stir to coat well. Check for seasoning. Serve with pasta with the toasted almonds as garnish. Finish with grated cheese and red pepper flakes to taste.
