2 cups sugar
3 eggs
2 cups oil
2 cups grated zucchini
3 cups all purpose flour
2 tsp. cinnamon
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1/2 cup milk
1 tsp. vanilla
2/3 cup chopped nuts (optional)

Directions:
Directions:
Preheat oven to 325º Blend together sugar, eggs, oil and zucchini. Add flour, cinnamon, baking soda and powder, salt, milk, and vanilla - blend thoroughly. Stir in nuts (if you so desire) and pour mixture into 2 greased and floured regular size loaf pans and bake at 325º for approximately 1 hour.

This loaf is almost like a dessert. Very nice hot out of the oven or it can be sliced and toasted slightly and then add a touch of butter for a sweet breakfast bread. Also freezes extremely well. This recipe has been in my family for over 25 years and is a family favorite. And, was one of Darren's favorites of mine. Enjoy!
