Directions:
After dough has risen overnight (or equivalent), divide the dough into 2 portions (with added flour for easier handling) and form into balls. Allow to dough balls to rise again while covered with towel for 3-8 hours.
Heat a baking stone set to middle position in a 525 degree (or hottest in your oven) for about 45 minutes.
Scoop up a dough ball and lay in a wide bowl with flour in it. Turn over to flour other side. Sprinkle some flour on a smooth clean surface and press/stretch out dough to desired thinness and transfer to a lightly floured pizza peel. You can also shape and cook on parchment paper for easier transferring, etc.
Spoon some tomato sauce on pizza until almost edges. Sprinkle on 1/2 the mozzarella cheese and then some grated cheese. Then a couple torn basil leaves. Shake pizza back and forth to make sure dough is sliding on the peel.
Carefully slide pizza onto baking stone and cook for 7-8 minutes. Carefully remove with peel and serve. Repeat with the other pizza.
